‘’कुहियार पेरा शाल’’

असम के दक्षिणी हिस्से में गन्ने का रस निकालने का यह पारम्परिक उपकरण कुहियार पेरा शाल के नाम से जाना जाता है। इस तकनीकी उपकरण के माध्यम से गन्ने की पिराई कर रस प्राप्त किया जाता है। इस उपकरण में लोहे के तीन बेलनाकार रोलर्स को लकड़ी पर बने खांचों में लम्बवत जोड़ा जाता है। इस ढांचे के ऊपरी खुले हुए भाग की तरफ एक लंबा जुआ लकड़ी के डण्डे साफ्ट के द्वारा जोड़ दिया जाता है, जिससे रोलर्स जुआ से जुड़ जाते है। जुआं के दूसरे बाहरी छोर को बैल की गर्दन पर रखा जाता है। बैल को उपकरण के चारों ओर चलाया जाता है। जब बैल चलते हैं तव जुआ के सहारे रोलर्स घूमने लगते हैं, जिससे रोलर्स के मध्य में लगने वाले गन्नों की पिराई होती है एवं इसके नीचे की ओर स्थापित पात्र में रस एकत्र होने लगता है

In the southern part of Assam, this traditional sugarcane crusher device is locally known as Kuhiyar Pera Shal. Through this technology the sugarcane sticks are crushed to extract the juice. In this technology three cylindrical iron rollers are vertically fitted into a wooden frame. At the upper outer of the frame a long yoke is fitted through a shaft, which connects the spindle of iron rollers, by the outer end of the yoke ox are tied. The other outer end of the yoke is placed on the ox neck. The ox is driven around the device.
